I love to experiment in the kitchen, and lately I have been accumulating an interesting assortment of ingredients to try. I decided to take some gluten free chocolate muffin mix that we got in a Love With Food box and add a couple of other things to it to crank ’em up a notch! We are Love With Food Gluten Free Ambassadors, so we get their monthly boxes free in exchange for review – this Simple Mills mix came in the December box. It contains only seven all-natural ingredients!
The mix calls for a couple tablespoons of vanilla, so it was the perfect opportunity to try my new Spicy World Madagascar Bourbon Vanilla Paste!
This stuff is crazy. They use only the best beans and a special process to make it. You can even see all the little vanilla bean flecks in it. It’s like extra vanilla-y vanilla! This is a little more expensive than some other vanilla extracts, but in my opinion it’s totally worth it. This is the kind of ingredient that you add to turn an everyday recipe into something special!
It was also a great way to use some of my freeze dried lingonberries! These berries are grown wild and hand-picked from the forests of Finland. (That’s just fun to say!) They’re packed with antioxidants and you can add them to all kinds of different things – including muffin mixes. I added a couple of tablespoons to the mix, and also added a little extra water (since I knew the dried berries would absorb some, and didn’t want dry muffins).
They have a tart-and-tangy taste – if you like cranberries, you will like lingonberries. Personally I love cranberries, especially in baking! The tartness goes very well in this chocolate muffin mix.
I’m counting this as a successful experiment, and would definitely recommend any of these yummy, high-quality products!
